Happy sweet potato month! Try these simple and delicious sweet potato kale burritos to celebrate it.
This recipe is such an easy way to incorporate veggies, fats, and proteins into a balanced meal; in fact, it only requires four main components!
The first step in this recipe is roasting the sweet potato with some vegan taco seasoning. This will give you that classic taco flavour we know and love.
Next is the kale. To help improve the texture of the kale, you can cut it up and massage it until the colour has changed to a brighter shade of green. This will ensure the kale is not as chewy or tough.
Adding some lemon or lime juice can add some flavour to the kale; however, if you don’t enjoy kale, feel free to swap it out for another type of leafy green!
Seasoned refried beans are another important component to this dish and help to provide plant-based protein. Make sure to check the ingredients as some refried beans contain lard and are not vegan.
Finally, my six-ingredient vegan sour cream will add some plant-based protein and healthy fats.
All that’s left to do after that is roll it up, or simply make it into a burrito bowl!
