Foodie Friday Healthy Buffalo Chicken Dip Stay on track this holiday season and look like a hero at your next get together with this delicious dip. We swapped out the cream cheese for non fat Greek yogurt and cottage cheese. It’s still creamy, but with less fat and way more protein! 😊💪 Holiday Survival Tip #1 Have a “pregame” snack, eat lots of protein and drink water before you go. You’ll be more likely to make healthier food choices if you’re not starving. Ingredients 2 cups cooked chicken, shredded 1/2 cup Franks Res Hot sauce 1/2 cup mozza cheese, shredded (could also use Monterey Jack, Colby, Blue cheese or whatever you like) 1 cup non fat Greek yogurt 1/2 cup cottage cheese (squeeze out extra liquid if needed) 1 cup cheddar cheese, divided (save some to sprinkle on top) Preheat oven to 350F Mix all ingredients in a bowl until well combined. Pour dip into a glass 8”x8” dish, top with remainder of the cheese. Bake for 25 min. Serve with veggies, chips or crackers. *this can be made ahead of time and warmed up before serving or reheated in a slow cooker. This Thai beef zoodle salad recipe (from taste.com.au) is a delicious but light alternative for a weekend dinner 🍽️ Ingredients: ½ cup (125ml) sweet chilli sauce 2 tbs fish sauce 2 tbs avocado or olive oil 2 garlic cloves, crushed 500g Coles Australian No Added Hormones Beef Scotch Fillet Steak 250g pkt Coles Australian Zucchini Noodles 1 Lebanese cucumber, peeled into ribbons 1 carrot, peeled, cut into noodles or peeled into ribbons 1 red capsicum, seeded, thinly sliced 1 red onion, thinly sliced 1 cup (80g) bean sprouts 1/2 cup basil leaves Method: 1. Whisk sweet chilli sauce, fish sauce, oil and garlic in a bowl. Reserve half the sweet chilli sauce mixture. 2. Heat a chargrill on medium-high. Cook beef for 2 mins each side. Brush top with some of the remaining sweet chilli sauce mixture. Turn and cook for 1 min. Brush top with remaining sweet chilli sauce mixture. Turn and cook for 1 min for medium-rare or until cooked to your liking. Transfer to a plate. Cover with foil. Rest for 5 mins. Thinly slice. 3. Combine zucchini, cucumber, carrot, capsicum, onion, bean sprouts and basil in a large bowl. 4. Divide salad among serving bowls. Top with the beef. Season. #winterwomenswellness || It’s Friday and so the weekend is upon us, a beautiful way to spend some time for yourself is making things for YOU.... Here’s the recipe for some of my no cook brownies Take 500g cashew nuts 500g dates 2 table spoons almond butter 100g cacao powder (or more if you wish more chocolaty) A squeeze of agave Shredded coconut (for the end) Place in a good mixer and whiz until all comes together, if texture a bit dry pop come coconut oil in to help it “stick”, if food mixer isn’t too powerful, put nuts in first to grind and slowly add ingredients to not over power it! Once mixture has been blended take a brownie tray and push mixture into tray until it’s evenly spread out and as thick as you want, sprinkle the shredded coconut on top and push in slightly so it sticks, then place in fridge. This is truly love at first bite! 🍰😍Here's a recipe worth baking! The wonderful @n3fn3f made this #guiltfree cake that taste as good as it looks. #diabeticfriendlyrecipes . Ingredients: 110g sour cream 4 large eggs 100g monk fruit sweetener 1/2 tsp vanilla extract 450g almond flour 2 tsp baking powder 1/4 tsp salt 3 tbsp @naturesuperfoods cacao powder 2 tbsp water . Instructions: 1. Preheat the oven to 176°C and grease a 9x5 inch bundt pan well 2. In a large bowl, whisk together the sour cream, eggs, monk fruit sweetener and vanilla extract. Add the almond flour, baking powder and salt, and stir until well combined 3. Mix the water and cacao powder separately 4. Transfer about 1/3 of the batter to a second bowl and whisk in the cocoa mixture 5. Dollop the two batters in an interchanging pattern, swirling together. Smooth the top. 6. Bake about 45-50 minutes. 7. This Low FODMAP Banana Pecan French Toast is just perfect to get your #FOODIEFRIDAY on!⁠ ⁠ C -54 P -16 F -23 471 kcal ⁠ ⁠ Ingredients: • 2 slices GF bread • 1 egg • 1 tsp cinnamon • 1/2 tsp dairy free butter • 2 tsp maple syrup • 40g banana • 2 tbsp pecans ⁠ ⁠ Method: ⁠ 1. In a pan melt 1/2 tsp of butter on medium heat. Once the butter has melted, add the maple syrup and stir for a couple of minutes. ⁠ 2. Add the bananas and stir to make sure they are well mixed with the syrup. Allow simmering for 2-3 minutes. Now add the pecan pieces, salt, and half of the cinnamon. Allow simmering once more for 4-5 minutes. Turn the heat down to low or simmer. ⁠ 3. Meanwhile, in a large shallow bowl, add the eggs and the rest of the cinnamon.⁠ 4. Whisk until the yolks and the whites are completely mixed with the rest of the ingredients. ⁠ 5. Dip one piece of bread in the egg batter mixture at a time and allow it to soak on each side for about 3045 seconds. Place the toast on the grill and cook on each side for 3-5 minutes, until golden brown. ⁠ ⁠ ⁠
