Breads are the same as last week but I’ll be changing the flour to the #50 mesh wheat flour. This mesh size is slightly bigger than the #100 mesh, so a lot more get through in terms of bran and some brown colour. The flour has a lot of flavour and you’ll get a lot of the sourdough, as the bacteria love the extra nutrients. I’ve attached a photo of the flours compared to white flour and a handy Mesh Size Guide that I got from a colleague. I have also attached a photo of the ingredient list of the flour I’ll be using this weekend, have a look and feel free to compare it to what you have in the pantry or better yet, ask your baker what’s in his flour.
